Lehsuni paneer tikka

Cottage cheese cubes marinated and cooked
in tandoor or preheated oven.
Preparation Time : 1.30-2 hour
Cooking time : 16-20 minutes

Main Ingredients
Paneer (cottage cheese), Garlic paste
Thread Paneer Spicy Paneer And
Spring Onion Canapes
Paneer (cottage cheese) cut
into 1½ inch cubes                                                                                                   850 grams
Garlic paste
                                                                                                                             2 tablespoons
Tandoori powder
                                                                                                                            2 tablespoons
Hung yogurt
                                                                                                                              300 grams
Cream
                                                                                                                             3 1/2tablespoons
Garlic chopped                                                                                                     5-6 cloves
Green chilli chopped                                                                                                 1
Fresh coriander leaves                                                                                     chopped 2 tablespoons
Salt                                                                                                                                 to taste
Red chilli powder                                                                                                   1 tablespoon
Turmeric powder                                                                                                 1/2 tablespoon
Garam masala powder                                                                                         1 1/2tablespoons
Carom seeds (ajwain)                                                                                           powdered 1 tablespoon
Chaat masala                                                                                                           1 tablespoon
Roasted chana dal powder                                                                                   4 tablespoons
Vinegar                                                                                                                1 tablespoon
Oil   

                                                                                                                    2 tablespoons
Method :
Step 1
Slit the cottage cheese cubes without cutting
through. Mix one tablespoon of the garlic paste and
tandoori masala in a small bowl.
Step 2
Stuff the mixture into the slits of the cottage cheese
cubes with your fingers. Set aside.
Step 3
Mix together the yogurt, cream, remaining garlic
paste, the chopped garlic, green chilli, fresh
coriander, salt, chilli powder, turmeric powder, garam
masala powder, carom seed powder, chaat masala,
roasted gram flour, vinegar and oil in a bowl.
Step 4
Soak the stuffed cottage cheese in this marinade and
set aside for around two hours in a refrigerator.
Preheat oven to 200°C/400°F/Gas Mark 6.
Step 5
Thread the cottage cheese cubes one inch apart onto
the skewers. Cook them in the preheated oven for
eight to ten minutes, or roast or grill over live
charcoal or in a tandoor over a moderate heat for six
to eight minutes.
Step 6
Serve hot with salad and green chutney.

Moong Dal halwa


Green gram cooked richly into a mouth-watering dessert with mother’s love.
Preparation Time : 11-15 minutes

Cooking time : 16-20 minutes

Servings : 4

Main Ingredients
Split green gram skinless (dhuli moong dal
Split green gram skinless
(dhuli moong dal) soaked and
ground to a coarse paste

1 cup

Ghee                                                    1 cup

Gram flour (besan)              1 tablespoon

Milk                                         1 1/2 cups

Saffron (kesar)                       for garnish

Sugar                                             1 cup

Khoya/mawa                              3/4 cup

Green cardamom powder         a pinch

Almonds cut into slivers              10-12

Chandi ka varq                             1 sheet

method : 

Step 1

Heat ghee in a non-stick pan. Add gram flour and mix
well. Add moong dal, lower heat and mix well.

Step 2

Sauté, stirring continuously, till golden brown or for
20-25 minutes.

Step 3

Heat ½ cup milk in a non-stick pan. Add generous
pinch of saffron and mix well for 1 minute. Switch off
heat.

Step 4

Heat sugar and 1 cup water in another non-stick pan.
Cook till sugar dissolves completely.

Step 5

Add saffron milk to moong dal and mix well.

Step 6

Add remaining milk and keep stirring.Add khoya in
saffron milk pan, mix and heat for 2 minutes.

Step 7

Add khoya to moong dal mixture alongwith
cardamom powder, some almond slivers and sugar
syrup.

Step 8

Mix well, cover and cook on low heat for 5 minutes,
stirring once a while.Remove lid, mix once. Switch off
heat and transfer in a serving dish.

Step 9

Serve hot garnished with chandi ka varq, saffron and
remaining almond slivers.
